Ouch!

I’m sore.

Gold’s Gym has this class called Body Attack, and I swear it was invented by the devil.  NOTHING gets your ”burn” on better, but you are sore for DAYS after!  Combine that with all the after work/weekend exercise I’ve been doing at Snap Fitness and in my league sports, I’m super sore.  As part of my resolution to lose the weight for good, I’ve been trying to hit the gym or play a sport 5-7 days out of the week.  Tonight, it’s Zumba and then a soccer game with a team I’ve never played with before.  The dieting/lifestyle change has been going great.  Not sure I’ll come in first in my work group’s one month “Biggest Loser,” but that’s not really the aim.  Besides, I’m fitting into things that I’ve not fit into in awhile, so I know it’s working.  Keep on keepin’ on, right?

There’s something else.  After the gym last night, I picked up a few things at my local Tops, and I caught a great sale on their store organic brand chicken thighs.  I scored 3 packages of 4 or 5 thighs each, for under $5, can you believe that?  I had a coupon for some spaghetti sauce ($1 off), so I decided to make crock pot chicken cacciatore!  I assembled it last night by chopping bell peppers and an onion (chunky, not diced); removing the chicken skin from the thighs and placing them in the pot; add one 12oz package whole white mushrooms, quartered; add 1 can organic diced tomatoes (partially drained); add 1 can quartered artichoke hearts (drained); 2 cloves garlic, pressed; and a couple shakes red pepper flakes.  I covered it with plastic wrap and kept it in the fridge overnight so I wouldn’t have to do anything this morning except add 1 small can tomato paste, and the jar of spaghetti sauce.  I put it on low around 8:15 this morning, and it’ll be going until about 6:15 at night.  I can’t wait to try it, but I’ll have to wait until I get home from my sports tonight.  I told the man all he has to do is turn off the crock pot and boil himself up 1 serving of whole wheat pasta and serve himself.

We’ll see how this turns out.
